How To Make Pineapple Upside Down Cake

Pineapple upside down cake is a sugary sweet delicacy that melts in the mouth. It is a derivative from a simple vanilla, white  or yellow cake recipe. So if you know how to make a vanilla cake, you are halfway through to knowing how to make a pineapple upside down cake.

This cake is called an upside down cake because the topping is made in reverse order.  The pineapple rings and cherries(or whatever fruits you decide to use) are arranged at the base of a baking pan before the cake batter is ladled on it.  When the cake is baked and inverted, the pineapple toppings show as the top of the cake.

How To Make Pineapple Upside Down Cake – Recipe

Ingredients

For The Topping You Need The Following:

Fresh Pineapple Rings (most recipes call for canned pineapples but we prefer fresh pineapple)

Maraschino Cherries or Fresh Grapes (whichever color of your choice but the darker ones make a great contrast to the pineapple)

¼ Cup Butter

½ Cup Brown Sugar

To Make The Cake You Need The Following:

Vanilla cake mix/vanilla cake recipe or any white cake recipe

The Juice from The Pineapple (If you are using the canned variety)

 

Instruction For Preparation And Baking

Make The Glaze

(i) Place the butter and brown sugar in a sauce pan and boil until the butter melts and the sugar gets bubbly.

(ii) Pour thus mixture into a 9 inch baking pan that you have properly greased.

(iii) Leave this to cool slightly

(ii) Note that you can substitute the pineapple juice for the milk in the recipe. In fact for pineapple upside down cake, it is ideal to use the pineapple juice. Bear in mind that fresh pineapple has more juice in case you choose to use fresh pineapples. (We usually drain the pineapple before using it; you do this by slicing the pineapple and placing over a wire rack on a tray for a while). This is actually why many people choose to use canned pineapple.

(iii) Also note that the batter for this cake should be slightly thick.

Assemble The Cake And Bake

(i) Arrange your pineapple rings on top of the butter and brown sugar glaze that you had previously poured into the baking pan.

(ii) Place maraschino cherries or grapes in the small spaces between the pineapple rings. Maraschino cherries are most popularly used but we tweaked our recipe by using dark red grapes.

(iii) Finally, dollop the cake batter on top of the pineapple ring layer and level the batter with a spatula.

(iv) Place in an oven preheated 350 degrees and bake for about 40 minutes or until a toothpick inserted into the middle of the cake comes out clean.

(v) Leave the cake to cool slightly in the pan. Then invert onto a serving platter.
