What Can I Use If I Don’t Have An Offset Spatula?
You can use an angled spatula, long knife, metal ruler or bench scraper if you do not have an offset spatula. All you need to do is to first, cover your cake with icing (you use the long knife but ensure that the sharp edge is facing the opposite direction of your spreading motion). Then secondly, you use the straight edge of the knife or angled spatula to smooth out the cake.
If you are using a metal ruler or bench scraper, just ensure that the straight edge is resting on the body of the cake. Align it well so that it is upright and then spin your turntable while holding the ruler or bench scraper to remove excess buttercream.
What Can I Use To Smooth Icing On A Cake?
Some veterans only need an icing spatula to cover their cake with buttercream and also smooth out the icing. But in a situation where you are facing some difficulty getting your cake smooth, here’s what to do:-
Allow the buttercream to crust (leave it to stand in room temperature for about 3o minutes)
Then get a paper towel and a fondant smoother – place the paper towel lightly around the cake and then run the fondant smoother over it.
