This recipe would produce a cross between the original whipped cream and buttercream pudding. One good thing about this recipe is that you can experiment with it to get a variety of flavors and consistencies.

1 Cup, 235ml or 8 fl oz Almond Milk

½ Tablespoon Cornstarch

¼ Teaspoon Xanthan gum or Guan Gum or Agar Aga

½ to 1 Tablespoon White Sugar

½ Teaspoon Vanilla Essence

Instructions For Preparation

The following are steps for this first recipe:-

(i) This recipe requires a double boiler. You can make a double boiler by adding water to a saucepan and bringing it to a boil. Then place a smaller saucepan on top of the bigger saucepan and leave it on low heat.

(ii) Place all the ingredients(except the sugar) in the smaller saucepan whilst it is still on low heat and whisk continuously until the mixture thickens a little bit

(iii) Remove the saucepan from the heat and continuing whisking until the mixture is very thick and fluffy. Leave the mixture to sit for 5 minutes and whisk it up.

(iv) Add the sugar and continue to whisk it. Leave the mixture to sit again for 5 minutes. Do this at intervals until you are satisfied with the texture.

(v) Once you have gotten the consistency you desire, place a plastic wrap directly on top of the mixture and put it in the fridge.

Ingredients

1 Can Unsweetened Coconut Milk (any size you have on hand)

2 Tablespoon Agave

1 Teaspoon Vanilla Essence

Instruction For Preparation

Follow these simple steps :-

(i) Stick the can of coconut milk in the fridge overnight. This would help to separate the milk from the liquid.

(ii) On the following day, place your mixing bowl in the fridge for 10 minutes and allow it chill. This would help to make the whipped cream get fluffy faster.

(iii) Open the can of coconut milk and pour out the liquid into another bowl (you can use this liquid for some other recipes). Scoop out the chilled milk into the chilled mixing bowl. Then add the agave and vanilla essence.

(iv)Whisks until it gets airy and fluffy.

(v) Use as topping for any of your desserts.

How To Make Whipped Cream With Almond Milk – From Scratch Recipe

This recipe is for those who have easy access to fresh raw almonds or love to make everything they eat from scratch.  You would need the following ingredients:-

Ingredients

1 Cup or 150 g Raw Almonds

1 Cup or 235ml Water

2 Dates (large)

2 Tablespoon Maple Syrup (you can use honey)

½ Teaspoon Vanilla Essence (you may choose to leave it out)

½ Teaspoon Ground Cinnamon (you may also leave this out)

Instructions For Preparation

Just follow these simple steps for preparation:-

(i) Soak the almonds in cold water and leave it overnight. If you don’t have enough time, you can soak it in hot water for 4 hours.

(ii) Boil some water in a small saucepan and add the pre-soaked almonds. Boil the almonds for a minute or two. Then drain and rinse it out with water.

(iii) Peel the skin off the almonds.

(iv) Place the peeled almonds in a blender, add the water, maple syrup and dates. You have chosen to use the favors, add them also. Blend very well.

(v) Transfer to a mixing bowl and whisk on medium speed until the mixture becomes airy and fluffy. It would also form soft peak.

(vi) Place in the fridge for half an hour before using it.

Note that this recipe would not be exactly like the original dairy whipped cream. But it does make a tasty and healthy substitute.

You can also tweak this recipe in many different ways. If  you want to use it as a topping for cakes, it’s best not to omit the vanilla.

There are two major methods of thickening almond milk. These methods include scalding the milk or adding flour or cornstarch.

There are two kinds of flours that are most commonly used to thicken almond milk and they are rice flour and all purpose (regular) flour.

The scalding method requires that place your almond milk in a saucepan and place on high heat. Boil until it’s just about to come to a boil.

These methods are used for homemade almond milk as store bought are usually thickened with a substance known as carrageenan.

Apart from the above methods, you can also reduce the ratio of water used per almond nuts. Then you blend very smooth and use without sieving the mixture. But note that you would need a very strong blender so that you would be able to achieve a smooth blend and at the same time not damage your blender.

What Is The Thickening Agent In Almond Milk?

The thickening agent in store bought almond milk is Carrageenan. It is a flavourless ingredient that is extracted from seaweed. Carrageenan also acts as an emulsifier that prevents oil and water from separating in an ingredient or recipe.

There’s been a lot of controversy over the use of Carrageenan in food. But it has not been conclusively proven to be harmful for human consumption. However, folks with health issues have felt safer to exclude it from their diet.

So if you are one of those that are concerned that it would be harmful to you, then you best ensure that you check the label of almond milk in the store before purchase.  Or just make your almond milk at home for all round rest of mind and assurance!

Can Almond Milk Go Bad In Fridge?

Almond milk can go bad in the fridge if it stays longer than recommended. However, you can check whether the milk is bad by checking the taste, smell and look of the milk. You can do this by pouring a little quantity into a glass cup and sniffing it. If it doesn’t smell nutty then the almond milk is bad.

In addition to that, any discoloration or lumps in the milk is a sign that it has gone bad.

Another sign you can look out for is a bloated milk carton. Please once the carton of your almond milk is bloated just throw it out; it’s better to be safe than sorry.

There are also some basic facts you need to know about almond milk.

There are two types of store-bought almond milk; shelf stable and refrigerated.

When you buy almond milk from the store take note of where you picked it from. If you picked it from the shelf that means it is the shelf stable variety but if picked from the fridge then it is the fridge stable variety.

The shelf stable variety of almond milk has a shelf life of 2 to 4 weeks and once it is opened can stay for up to 7 days in the fridge. The refrigerated variety can be left unopened in the fridge for up to 1 week. Once it is opened, it has to be used between 7 to 10 days.

Homemade almond milk however is best used between 3 to 4 days of being in the fridge. This is because store bought almond milk is pasteurised while homemade almond milk is not.
